Mexican Bean Dip

This is a recipe I got out of a school recipe book, put out by the local public school.  It is really  yummy!!  And it’s easy to make!!

Mexican Bean Dip

1 can re-fried beans

1 1/2 c. sour cream

1/2 pkg. taco seasoning

2 ripe avocados

3 oz. cream cheese

2 T. lemon juice

1 medium onion, diced

2 nice sized tomatoes, diced

cayenne pepper (to taste, optional)

1 -2 c. shredded cheddar cheese

Put into Layers:

Layer 1:  1 can of re-fried beans

Layer 2:  mix together 1 cup sour cream and 1/2 pkg. of taco seasoning, spread over beans

Layer 3:  blend together 2 ripe avocados, 3 ounces cream cheese, 1/2 c. sour cream, 2 tablespoons lemon juice, diced onion and diced tomatoes.  Add cayenne pepper, if using.  Spread on top of other two layers

Layer 4:  sprinkle with the shredded cheese
