Ham and Potato Casserole

This is a great recipe for a cold day!!  It will warm you right up on those frosty days!!  This is also an easy recipe to throw together.  It will be easy to throw together, put in the oven and relax a bit before dinner!!  The sour cream makes this a divine tasting dish!! 

Ham and Potato Casserole

2 Tablespoons shortening

1/4 c. minced onion

1 c. fresh or 1 (4oz) can sliced mushrooms

1 1/3 c. sour cream (if you use more than 3 c. of potatoes, you will have to adjust this accordingly)

3 c. diced ham

3 to 6 c. diced cooked potatoes (do not overcook, you want them done, but not soft or mushy)

1 c. shredded cheese (again, if you use more potatoes, adjust the amount of cheese accordingly)

Sauté the onion and mushrooms in the shortening, just until onion is transparent.  Add all other ingredients, except 1/2 the amount of cheese you will be using.  Bake in a three-quart casserole dish at 350° for about 30 minutes.  Add the last half of the cheese to the top of the casserole and bake for an additional 10-15 minutes or until cheese is melted and bubbling.

    Sounds pretty good. I don’t eat ham, but I bet I could add another meat in its place and it would still be taste delicious.
