My husband loves hush puppies.  I hate hush puppies.  This one’s for you baby!!  And for all those other odd-balls out there that like these little nasties!!

Hush Puppies

1 cup cornmeal

2 Tablespoons flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1 egg , beaten

3/4 cup buttermilk (3/4 c. milk + 3/4 T. vinegar, if you don’t have buttermilk))

3 Tablespoons chopped onion or green chilies or peppers

lard or oil for frying

In a large bowl, stir together cornmeal, flour, soda and salt.  In another bowl, mix eggs, buttermilk and onion.  Add this mixture to dry ingredients; stir with fork until just moistened.  In a 10″ frying pan, melt lard to make 1/2″ deep.  Or use enough oil to make 1/2″ deep.  When hot, drop into batter by scant Tablespoon, and spread to make a small patty.  Fry until golden brown, about 2-3 minutes, turning once.  Drain thoroughly.  Serve warm.  Yield: about 24 hush puppies.
