Potato Hot Dog Soup (J.C.)~~by TummyPleasers

This one sounds like it would be good for dinner with the kids!!  Potato soup is one of my favorites.  When I saw this variation, I thought it would be a good one to share with you!!  Let me know how you like it!!

Potato Hot Dog Soup

8 cups sliced potatoes

1 cup diced celery

1 1/2 cups diced onion

2 teaspoons salt

1/4 teaspoon pepper

6-8 slices bacon

1 package hot dogs (whatever brand you like)

Cook potatoes, celery, onions, salt and pepper in about 6 cups of water or enough water to just cover the potatoes.  Cook until potatoes are tender.  While potatoes are cooking, prepare the bacon and hot dogs.  Cut bacon into one-inch pieces and fry until crisp.  Set aside.  Cut hot dogs into small bite-size pieces, cover with water and bring to a boil.  Turn off heat and set aside til potatoes are done.  When potatoes are done, DO NOT DRAIN.   With an electric mixer, mix all ingredients until almost pureed.  Add pieces of bacon and about 1/3 cup bacon grease.  Scoop out hot dogs from their water and add to soup.  If soup is too thick, add a little hot dog water to it, until desired consistency.
