Pumpkin Butter~by TummyPleasers (N.H.)

My husband is a big fan of Apple Butter.  Me, not so much, but it’s good now and then.  When I saw this recipe I knew I had to put it on here!!  It sounds very interesting and I’m going to have to try it….Anyone out there made this before??  Is it good??  Let me know!!

Pumpkin Butter

3 1/2 cups cooked pumpkin (one 29 oz. can)

1 Tablespoon pumpkin pie spice

1 box ( 1 3/4 oz.) powdered fruit pectin

4 1/2 cups sugar

To make butter, measure 3 1/2 cups pumpkin into a large saucepan.  Add spice and fruit pectin to pumpkin and mix well.  Place over high heat and stir until mixture comes to a hard boil.  Add all sugar immediately and stir.  Bring to a full rolling boil  and boil hard one minute, stirring constantly.  Remove from heat.  Ladle pumpkin butter, boiling hot, into jars filling to within 1/2 of top.  Seal with two-piece vacuum seal lids according to manufacturer’s directions.  Process five minutes in a boiling water bath canner.  Yields about 5 1/2 cups or seven 6-oz. jars.
